French Cherry Clafoutis

A classic French country dessert, clafoutis is made of fresh cherries buried in a thick vanilla flavored custard. The perfect summer dessert, easy to prepare and oh so delicious!

Ingredients
  • 500g cherries
  • 4 eggs
  • 80g sugar (I used half coconut sugar, half birch sugar) plus extra for dusting
  • 30g almond powder
  • 30g brown rice
  • 30g potato starch
  • 1 tsp baking powder
  • ½ tsp vanilla powder
  • 250 ml cream or vegetal cream
  • Butter (or oil) for greasing
Instructions
  1. Preheat oven to 180 degrees.
  2. Wash and pit the cherries.
  3. Whisk sugar, vanilla powder and eggs together in a large bowl together. Mix almond powder, rice flour, potato starch and baking powder and incorporate to the batter Stir in the cream.
  4. Grease a baking dish (mine is 33x20cm). Sprinkle coconut sugar to coat the bottom of the pan.
  5. Scatter the cherries and gently pour the clafoutis batter over.
  6. Bake for 40-45 minutes, or until golden brown and puffy.
  7. Let the clafoutis cool down a little before serving.
