A classic French country dessert, clafoutis is made of fresh cherries buried in a thick vanilla flavored custard. The perfect summer dessert, easy to prepare and oh so delicious!

Ingredients
500g cherries
4 eggs
80g sugar (I used half coconut sugar, half birch sugar) plus extra for dusting
30g almond powder
30g brown rice
30g potato starch
1 tsp baking powder
½ tsp vanilla powder
250 ml cream or vegetal cream
Butter (or oil) for greasing
Instructions
Preheat oven to 180 degrees.
Wash and pit the cherries.
Whisk sugar, vanilla powder and eggs together in a large bowl together. Mix almond powder, rice flour, potato starch and baking powder and incorporate to the batter Stir in the cream.
Grease a baking dish (mine is 33x20cm). Sprinkle coconut sugar to coat the bottom of the pan.
Scatter the cherries and gently pour the clafoutis batter over.
Bake for 40-45 minutes, or until golden brown and puffy.
Let the clafoutis cool down a little before serving.
