Just made a delicious Galette des Rois today using my quick and easy rough puff pastry recipe. It may rise a little less than with classic puff pastry foldings, but the result is still light, crispy, and delicious. 🌑 Blueberry gluten free galette 🌲The forest

🌑 Blueberry gluten free galette 🌲The forest is my happy place. I love the fall colors and there is still an abundance of wild blueberries to pick. With these juicy berries I prepared a simple, rustic blueberry galette, with a sweet shortcrust pastry base ('pâte sablée').⁣
⁣
After rolling the dough out, I sprinkle it with almond meal that soaks up any excess of blueberry juice. Try this no-fuss recipe for a delicious treat! ⁣
⁣
For the crust you need:⁣
80g buckwheat flour⁣
120g rice flour⁣
50g almond flour + extra to sprinkle on the crust⁣
1 tbsp psyllium⁣
Pinch of salt⁣
60g sugar⁣
125g butter or margarine cut in small dices⁣
1 egg yolk⁣
5-6 tbsp icy water⁣
⁣
Filling⁣
600g blueberries⁣
1 tbsp sugar⁣
+ 1 egg yolk⁣
⁣
1. Mix flours, almond meal, psyllium, sugar and salt together. Add butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.⁣
2. Make a well in the center and add the egg yolk and water. Mix briefly to a firm dough, pressing with your hand palm. Wrap in cling film and chill for 1h. ⁣
3. Line a baking sheet with parchment paper. Roll out the dough to an cercle (approx. 30 cm).⁣
3. Sprinkle almond meal then pour blueberries leaving a 4-5cm border.⁣
4. Fold up the uncovered border over the edge of the berries. Brush the egg yolk onto the folded border. Sprinkle sugar over the galette.⁣
5. Bake in oven preheated at 180°C for 35 min.⁣
⁣
🇫🇷J'adore les couleurs d'automne qui parent déjà la forêt finlandaise. On trouve encore des myrtilles sauvages en abondance, bien que la saison touche à sa fin. J'en ai profité pour préparer une dernière galette rustique avec ces petites baies juteuses et une base de pâte sablée. Je saupoudre toujours mon fond de pâte avec un peu de poudre d'amande pour qu'elle absorbe le jus des baies lors de la cuisson.⁣

Today I thought I'd share with you a video about one of my favorite flavor, my chocolate chip cookies!⁣⁣

It's now back-to-school time in Finland (yes already!), which means for many of us back to a busier schedule, juggling work, regular meals, homework, clubs and chores.⁣ Baking for me is a way to slow down and bake free from busyness.😌⁣⁣

I created that cookie baking mix because I wanted to get away from unhealthy after-school snacks for my son, you know those full of additives and white sugar. I like to freeze some cookie balls, which I can then easily pop to the oven whenever needed! 👌⁣⁣

J'ai créé ce mix avec en tête l'idée d'avoir toujours sous la main des cookies frais faits maison, d'ailleurs j'aime congeler des boules de cookies que je peux ensuite passer rapidement au four quand je le souhaite, pratique ! 👌⁣⁣

The next best thing in Crete after walking along the beach by breaking waves is definitely the amazing FOOD. Cretan cuisine lives up to its reputation, delicious, genuine with fresh ingredients, tons of herbs and flavors! ⁣

I share with you the restaurants in Chania area (northern Crete) which stole my heart and some of my favorite cretan dishes. Look up recipes online so you can try them home!⁣

🍴Kyano @kyanoplatanias is a restaurant in the beach front of Platania, lovely place to enjoy a big plate of grilled seafood watching the sunset.⁣

🍴An other beach restaurant is Therino (@TherinoFamilyRestaurant on FB), where I tasted my favorite dish of all, garides saganaki: a traditional greek appetizer of sautéed prawns in a spicy tomato sauce with a splash of ouzo, and topped with crumbled feta. Yummyyyy!⁣

🍴Amarantos Taverna is worth the very steep walk uphill to get to the restaurant! The best grilled cheeses ever, amazing meatballs and a roof terrace with a beautiful view! @MezedopoleioAmarantos on FB⁣

🍴 Agioklima @agioklima_restaurant, a family-owned restaurant, delicious meatballs, stuffed paprikas and friendly owner.⁣

I tasted the best meatballs - aka Soutzoukakia - in my life in Crete. Flavored with oregano and mint and cooked in a hearty tomato sauce, they are to die for!⁣

All in all, portions are very generous in Crete (appetizer = main dish size!), every meal ends with complimentary dessert and raki! A foodie traveler paradise 😃

Worth to note: ice cream stands are not in every corner in Crete, one worth visiting is @lets_spoon_chania , in Chania old town, by the harbour. Good surprise: the waffle cones are gluten free!⁣

🍒My first clafoutis of the summer (say 'clah-foo-tee'), prepared with a combination of cherries and nectarines, for different flavors at every bite!⁣

I am nowadays practicing creating reels rather than photoshooting (my comfort zone), let me know if you like this new format to present my recipes! ⁣

For this French dessert you need:⁣
400g cherries⁣
1 nectarine⁣
1 egg⁣
80g sugar plus extra for dusting⁣
20g almond powder⁣
30g brown rice⁣
20g potato starch⁣
1 tsp baking powder⁣
½ tsp vanilla powder⁣
250 ml (vegetal) cream⁣
Butter or margarine for greasing⁣
⁣
🍒Preheat oven to 180 degrees.⁣

🍒Wash and pit the cherries (check the video on my blog how to do it easily with a straw!). Cut the nectarine in slices.⁣

🍒Whisk sugar, vanilla powder and eggs together in a large bowl. Mix almond powder, rice flour, potato starch and baking powder and incorporate to the batter Stir in the cream.⁣

🍒Grease a baking dish. Sprinkle sugar to coat on the bottom.⁣ Scatter the cherries and nectarines and gently pour the clafoutis batter over.⁣

🍒Bake for about 45 minutes, or until golden brown and puffy.⁣

🍒Let the clafoutis cool down a little before serving. Bon appétit!⁣

No bake strawberry tart🍓⁣

My #glutenfree #dairyfree twist on a recipe that hails from the cookbook 'Les tartes faciles', which my good friend introduced to me through this delicious summer dessert. Perfect when it's too hot to turn the oven on!⁣
⁣
No bake crust:⁣
150g oat flakes⁣
50g almond powder⁣
20g tahini paste⁣
60-70g neutral tasting coconut oil⁣
3 tbsp maple syrup⁣
⁣
Filling:⁣
400g strawberries⁣
25 ml water⁣
20g sugar⁣
1 tbsp corn starch⁣
mint leaves⁣
⁣
🍓Toast oat flakes in a skillet on high heat for 5 min, tossing frequently to avoid them to burn. Add to a blender and blitz few seconds.⁣
⁣
🍓In a recipient, mix almond powder with oat. Stir in tahini paste, coconut oil and maple syrup and blend until a thick dough forms.⁣
⁣
🍓Place the dough into 22 cm diameter pie pan and press down with a spoon to spread evenly along the bottom. Place 1h minimum to refrigerator.⁣
⁣
🍓Wash and trim the top of the strawberries. Take 100g and blend into puree. In a saucepan, add water, sugar, corn starch and mashed strawberries. Bring to boil and cook on low heat for 2-3 min to thicken. Let cool down.⁣
⁣
🍓Cut the rest of the strawberries into dices, add chopped mint leaves and mix with the previous preparation.⁣
⁣
🍓Spread the filling over the prepared crust. Top with whipped cream or serve with ice cream! ⁣
