Vegan, gluten free and sugar free coconut macaroons or French 'Rochers coco', moist and chewy inside with a crisp outside. Dipped in dark chocolate for a delicious snack or dessert.

Ingredients
200 g shredded coconut
4 tbsp agave syrup
60 g corn starch
60 g rice milk (or other vegetal milk)
80 g homemade applesauce
½ tsp vanilla extract
100 g dark chocolate (dairy free), melted
Instructions
Preheat oven 185 degrees and line a baking sheet with parchment paper.
Stir together the corn starch with rice milk. Combine with shredded coconut, agave syrup, vanilla extract and applesauce. Add a hint of milk if needed to help the mixture stick well together.
Shape the 'rochers' straight on top of the parchment paper with the tip of your fingers (it is easier than inside your hands). You can make about 10-12 macaroons with these quantities.
Bake 15 minutes or until edges and bottom are golden. Let the macaroons cool down entirely.
Dip the macaroons base in chocolate, handling them gently and place them on parchment paper. Let the chocolate harden before peeling them away. Serve or keep in a box for several days.
Notes
I make homemade applesauce by simply peeling and cutting an apple, and cooking it couple of minutes until tender, then mixing it with hand held mixer.
