Halloween Bats Energy Balls (No-bake, Vegan)

Adorable Halloween bats full of bliss! A healthy no-guilt treat for your parties, gluten free, dairy, sugar free, vegan... super delicious and fun to make!

  • 50 g cashew nuts
  • 20 g hazelnuts
  • 10 fresh soft dates, pitted
  • 1 tbsp cocoa powder
  • ½ tsp vanilla extract
  • 1 tsp coconut oil
  • Pinch of sea salt
  • Coconut chips (or sliced almonds) shaped as 'teeth'
  • 50 g dark vegan chocolate
  • Edible eyes
  1. Blend the nuts in a food processor, pulsing until tiny chunks remain.
  2. Add the dates, vanilla extract, coconut oil, sea salt and cocoa powder and process until well combined. The mixture should be a little sticky.
  3. Roll the mixture with your hands into six balls.
  4. Melt the chocolate in bain-marie or in micro-wave. Pipe it to parchment paper in the shape of bats wings. One end of the wings should be slightly longer so you can stick it into the energy ball (see my picture). Place to refrigerator for 10 minutes for the chocolate to set and harden.
  5. Assemble the bats energy balls. Stick one wing on each side of the ball, gently press the eyes on the front and stick two 'teeth' under.
  6. Store in refrigerator until time to serve. Enjoy!
